2 1/4 cups (4 1/2 sticks) butter

2 1/2 cups sugar

3 eggs
•
3/4 cup dark molasses
•
1 1/2 teaspoons vanilla
•
8 cups (2 pounds) pastry flour
•
1 1/2 teaspoons baking soda
•
1 1/2 teaspoons salt
•
1 tablespoon plus 1/4 teaspoon cinnamon
•
1 tablespoon plus 1/4 teaspoon cloves
•
1 tablespoon plus 1/4 teaspoon ground ginger
•
1/2 cup coarse or sanding sugar, more as needed
