2 1/4 cups very strong brewed coffee

1 tbsp pure vanilla extract
•
1 1/2 cups Dutch processed cocoa
•
1 1/2 cups cake and pastry flour***

3/4 cup cane sugar
•
1 1/2 tsp baking powder
•
3/4 tsp sea salt
•
*** If baking for gluten free guests, substitute 1 1/2 cups gluten free flour blend, plus 3/4 tsp xanthan gum for the cake and pastry flour.

Dark Chocolate Ganache
•
2 cups good quality dark chocolate (70% cocoa), chopped
•
2 cups coconut cream (or 2 cups whipping cream)
