Mocha Cherry Cake with Maple Butter Glaze
"Inspired by a recipe from Good Housekeeping, this cake is just right for a get-together with the girls and the glaze is sure to get a wide-eyed, jaw-dropped WOW...."
INGREDIENTS
•
4 shots espresso or 2 teaspoons instant coffee +1/4 cup hot water
•
1/4 cup dried tart cherries
•
2 tablespoons Imperial Sugar Light Brown Sugar
•
1 stick butter, at room temp
•
1/2 cup Imperial Sugar Light Brown Sugar
•
3 tablespoons sour cream or plain yogurt
•
2 eggs
•
1 teaspoon vanilla
•
1 1/2 cups all-purpose flour*
•
1/2 teaspoon baking powder
•
1/2 teaspoon baking soda
•
1/4 cup chocolate chips
•
1 tablespoon butter
•
2 tablespoons maple syrup
•
3/4 cup Imperial Sugar Confectioners Powdered Sugar
•
*Spoon & Sweep method: Use a spoon to fill measuring cup with flour until required amount is obtained. Scooping measuring cup directly into flour bag will firmly pack flour resulting in too much flour required for recipe.
