INGREDIENTS
For the pastry cream:
1 cup whole milk
5 tablespoons sugar
3 large egg yolks
1 tablespoon cornstarch
1 tablespoon flour
1 tablespoon unsalted butter
1 teaspoon vanilla extract
For the pastry dough:
1 1/4 cups all-purpose flour
1 1/2 tablespoons sugar
1/2 cup (1 sticks) unsalted butter, chilled and cut into small pieces
1 large egg yolks
2 tablespoons ice water
1 egg white, reserved from earlier
For the cake:
8 tablespoons (1 stick) unsalted butter softened, plus more for parchment
1 1/3 cups all-purpose flour sifted, plus more for parchment
1 cup sugar
1 teaspoon pure vanilla extract
2 large eggs
1 teaspoon baking powder
1 pinch of salt
1/2 cup buttermilk
For the mixed berry tart:
Fresh strawberries, stemmed and sliced in half
Fresh blueberries
Fresh raspberries
3 tablespoons apricot preserves
3 tablespoons water
