INGREDIENTS
1/4 cup blanched almonds, lightly toasted and chopped
1 1/2 cups fresh mint leaves, packed and stems removed
1/2 cup fresh oregano, packed and stems removed
3 garlic cloves
juice of one lemon
zest of one lemon
1/2 cup extra-virgin olive oil (or more depending on the consistency you like)
1/3 cup goat's milk feta cheese, crumbled
Salt and black pepper to taste
