Mini Pecan Pie Cookies - Rave About Food

"Baking these yummy cookies is an annual tradition and the holidays just aren't the same in our home without Mini Pecan Pie Cookies...."

INGREDIENTS
16 ounces refrigerated pie crust (or 1 box Pillsbury mini pie crusts)
1 cup pecans (chopped)
20 pecans (halves for topping each pie)
2 eggs (lightly beaten)
1 tablespoon butter (softened)
1/3 cup corn syrup (light)
1/3 cup light brown sugar
1/2 teaspoon vanilla extract
