About 8 cups vegetable oil, divided (I didn't use this much)

1 1/2 cup cornmeal
•
1 1/2 teaspoons baking powder
•
1 teaspoon sugar
•
1/2 teaspoon baking soda
•
1/8 teaspoon cayenne
•
2 large eggs
•
1 1/4 cup well-shaken buttermilk
