INGREDIENTS

2 tablespoons heavy cream

1/2 cup white granulated sugar

2 tablespoons unsalted butter (at room temperature and cubed)

1/8 teaspoon ground cinnamon
•
1/8 teaspoon ground ginger
•
Pinch of ground allspice
•
Pinch of ground cardamom
•
Pinch of ground cloves
•
Pinch of salt

4 small Honey Crisp apples (cored and diced (the only reason I’m dicing them is because the pies are mini; if you’re making a big ol’ apple pie just slice them))

Juice from 1/2 lemon
•
1 double-batch pie crust (store-bought or homemade)

1 large egg (whisked with 1 tablespoon of water)
