Minestrone Soup Recipe

"With any combination of leafy greens, vegetables and beans, this beloved Italian favorite can be thrown together with whatever's in your pantry. Ours includes corn, zucchini, carrot, chick peas and kidney beans...."

INGREDIENTS
2 cups (480 ml) vegetable stock 4 (240 g) Roma tomato ½ (40 g) carrot ½ (80 g) onion, peeled ½ (50 g) celery stalk ¼ teaspoon dried basil ¼ teaspoon dried oregano 2 Tablespoons tomato paste
½ cup (120 g) chickpeas, drained ½ (100 g) zucchini 1 cup (260 g) kidney beans, drains ½ cup (100 g) corn kernels ½ cup (50g ) Pecorino Romano cheese, grated salt and pepper, to taste
