Million Dollar Stew

INGREDIENTS
3 pounds boneless pork shoulder (cut into 1-inch pieces)
Kosher salt Pepper
2 tablespoons canola oil
2 large onions (1 finely chopped and 1 quartered)
6 garlic cloves (4 finely chopped and 2 whole)
One 15-ounce can whole peeled tomatoes (crushed by hand)
2 chipotle chiles in adobo sauce (seeded and minced)
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
3 quarts chicken stock or low-sodium broth
1/2 pound black-eyed peas (picked over)
2 pounds collard greens (stemmed and chopped)
Season the pork with salt and pepper
