4 cups quinoa
8 cups water
1 1/2 teaspoons minced garlic
1/4 cup red onion, chopped
2 avocados, seeded and chopped
2 yellow peppers, seeded and diced
1 can (24 ounces) black beans, drained and rinsed
2 cans (10 ounces each) corn, drained
4 Roma tomatoes, diced
1 jalapeño pepper, stemmed, seeded, and minced
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons ground cumin
Juice of 1 lime
1/2 cup chopped fresh cilantro
