  • 1 pound lean ground beef
  • 1 small sweet onion (, diced)
  • 15 ounce can diced tomatoes, undrained
  • 10 ounce can Rotel, undrained
  • 1 cup low-sodium chicken broth
  • 3/4 cup uncooked long grain white rice
  • 2 teaspoons brown sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon black pepper
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • fresh chopped cilantro ((or parsley))
