INGREDIENTS

2 plum/roma tomatoes finely chopped

2 tbsp. vegetable oil
•
1 cup onion, minced
•
2 cloves garlic, minced
•
1 cup long grain rice
•
1 3/4 cup chicken broth (vegetable broth or water is good, too)
•
1/4 cup tomato sauce
•
1/4 cup chopped fresh cilantro (optional)
•
1 tsp. dried oregano
•
salt and pepper to taste (I used about 1 teaspoon of salt and about 1/4 tsp of pepper)
