1/4 cup fresh cilantro leaves, lightly packed

1 (8 ounce) package cream cheese

2 cups monterey jack cheese, shredded, divided (use block cheese and grate yourself for best flavor!)

1 medium onion (about 2/3 cup chopped)
•
1 (28 ounce) can enchilada sauce
•
12 (6 inch) corn tortillas
•
3 cups cooked chicken (diced or shredded) - I take 2 or 3 boneless skinless chicken breasts (thawed) and cook them in the Miracle Pot 8 - 12 mins covered in the microwave - ask me if you need to know more....
