Mexican Fried Rice

INGREDIENTS
3 tablespoons olive oil, divided
1/2 small onion, finely diced, about 1/2 cup
4 garlic cloves, minced
1 large red bell pepper, chopped small, about 1 cup
1 lb ground beef
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons plain or smoked paprika
1/2 teaspoon salt, adjust to taste
1/2 teaspoon black pepper
1 15 ounce can black beans, rinsed well and drained
1 14 ounce can of corn, drained
1 7 ounce can green chiles, about 2/3 cup
4 cups COLD cooked white rice
2 tablespoons Cholula hot sauce, or the hot sauce of your choice ((adjust to taste))
1/4 cup green onions, sliced thin
1/4 cup fresh cilantro, chopped small
