Ingredients: 4 cups frozen corn (thawed) or 8 large ears fresh corn; 1/4 cup red onion, chopped; 1/4 cup green bell pepper, chopped; 1/4 cup red bell pepper, chopped; 1 large tomato, seeded and chopped; 2 teaspoons garlic, chopped; 1/4 cup basil leaves, chopped (or 1 teaspoon dried basil); 1 teaspoon dried oregano; 1 teaspoon red pepper sauce (optional); 1/3 cup olive oil; 2 Tablespoons fresh lime juice; 1 Tablespoon rice wine vinegar; Salt and pepper, to taste; 1 jalapeno pepper, seeded and chopped (optional)
