1 tablespoon vegetable oil or bacon grease (I personally prefer bacon grease)

1 small white onion, chopped
•
3 garlic cloves, minced
•
2 jalapeno peppers, seeded, minced
•
1 4 oz can diced green chiles
•
1 tablespoon ground cumin
•
1/2 teaspoon chili powder
•
1/4 teaspoon cayenne pepper
•
1/4 cup chopped fresh cilantro
•
Juice from 1/2 lime
•
salt and pepper to taste
•
Freshly crumbled Cotija cheese, chopped cilantro for garnish
