Mediterranean Zucchini Roasted With Olives, Feta & Tomatoes

INGREDIENTS
6 large zucchini, cut into 1⁄2-inch [1cm] diagonal slices
7 oz feta cheese, roughly chopped
2 1⁄2 cups sun-dried tomatoes in olive oil
1 cup and 3 Tbsp black olives
2⁄3 cup panko breadcrumbs
Freshly ground black pepper
