INGREDIENTS
1 tablespoon olive oil
1 1/2 pounds lean beef stew meat, cut into 1-inch pieces and trimmed of fat
3 medium carrots, cut into 1/2-inch slices
1 medium onion, cut into thin wedges
1 medium yellow sweet pepper, cut into 1-inch pieces
1 teaspoon dried Italian seasoning, crushed
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1 14 1/2 ounce can diced tomatoes, undrained
1/2 cup lower-sodium beef broth
1 medium zucchini, halved lengthwise and cut into 1/4-inch-thick slices
6 ounces dried multigrain or whole grain penne pasta
1 recipe Basil Gremolata (below)
2 tablespoons finely shredded Parmesan cheese
2 tablespoons snipped fresh basil
2 cloves garlic, minced
