4 tablespoons fresh lime juice, divided

2 tablespoons raw apple cider vinegar (such as Bragg's)
•
1 tablespoon coconut palm sugar or date sugar
•
1 teaspoon unrefined sesame seed oil
•
1/2 cup organic spelt flour (I prefer sprouted spelt flour by One Degree Organics)
•
2 tablespoons plus 1/2 teaspoon organic, extra virgin coconut oil, divided
•
1 medium red onion, quartered and sliced thin
•
3 cups shredded carrots
•
1 pound snow peas, stem ends removed
•
2 tablespoons minced scallions, white parts only
