May's Meatball Lasagne

INGREDIENTS
Prep Time: 30 minutes
Cook Time: 40 minutes
Yield: 6-8 Persons
What you need: 9 x 13 pan (oven proof) or disposable foil tray
in lasagna ingredients
2lbs ground beef (separate 1/3 meat to make enough meatballs to cover the top of the lasagna)(set the meatball meat aside)
1 large onion,
1 red pepper,
1 cup mushrooms chopped
2 tbsp fresh basil / oregano,
3 tbsp. fresh garlic
3 jars tomato sauce
1 can of chopped tomatoes
garlic powder, salt, pepper
1 can of tomato paste
2 tbsp. of sugar
2 tbsp. each of dry basil and oregano
Approx 12 Lasagne sheets (fresh or dried)
First Filling
2 packages of frozen chopped spinach (squeeze water out of it) (reserve 1/4 cup of spinach to go in the meatballs
1 large tub of cottage cheese
2 egg yolks
3tbsp parmesan cheese
Second Filling (the meatballs)
1/3 of the total ground beef from the main lasagna ingredient list
1/4 cup of reserved spinach from the first filling list
small finely chopped onion
1/3 cup crushed bread or cracker crumbs
1 tbsp. finely chopped fresh basil/oregano ( you can use the dried kind
1 tsp fresh garlic
