INGREDIENTS

To make the cupcakes:

1 Box Spice Cake Mix (Duncan Hines is recommended)
•
1 15 oz Can Pumpkin Puree (not pumpkin pie filling)

Mix together ingredients and divide into a greased or lined cupcake pan. The mixture will be thick & dense, but these bake surprisingly fluffy. Bake at 350 Degrees F for 20-25 minutes.

To make the Maple Cream Cheese Frosting:
•
1 package (8 oz) cream cheese, at room temp
•
1/2 cup butter, at room temp
•
2 - 4 cups icing sugar
•
2 tbs pure maple syrup
•
Pumpkin Pie Spice for garnish

Cream the butter, cream cheese and maple syrup together with an electric mixer. Slowly add the icing sugar and mix until smooth.

*If you're like me, add the 2 cups of icing sugar, combine and taste and add more if necessary :) Same goes for the maple syrup, you can always add more to taste.
