2 cups (about 3 pears) firm-ripe pears, peeled, cored, and chopped into 3/4-inch pieces
2 tablespoons lemon juice
2 tablespoons unsalted butter, softened
1 tablespoon granulated sugar
3 eggs
1/3 cup maple syrup
3/4 cup all-purpose flour
1/4 teaspoon salt
1 cup heavy cream
1teaspoon vanilla extract
powdered sugar for dusting
