Maple Cinnamon Crunch Quinoa Granola
Makes approximately 4-5 cups
1 cup quinoa, uncooked (rinsed well and drained)
1 cup sliced almonds
1/2 cup walnuts, chopped
1 cup unsweetened shredded coconut or coconut chips
1/3 cup flax seeds
1 tablespoon chia seeds
3/4 cup raisins or dried cranberries
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon sea salt
1/2 cup maple syrup
1/3 cup coconut oil, melted
1 teaspoon vanilla extract
