Manicotti

"This 4-cheese manicotti finishes in less than an hour! It's an easy (and vegetarian) weeknight dinner that is perfectly cheesy and saucy...."

INGREDIENTS
8 oz manicotti shells
24 oz whole milk ricotta (about 3 cups)
1 cup shredded mozzarella cheese ((note that you will need another cup of cheese for the topping))
4 oz cream cheese (softened)
½ cup grated parmesan cheese
1 large egg
2 garlic cloves (pressed)
3 Tablespoons finely chopped fresh parsley (plus additional for topping if desired (may substitute 1 Tablespoon dried parsley))
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon table salt
½ teaspoon ground black pepper
1 cup shredded mozzarella cheese
2 cups marinara sauce (homemade or store-bought (500ml))
Additional fresh parsley or parmesan for garnish (optional)
