INGREDIENTS
***For the stew:***
1 tablespoon extra-virgin olive oil
1 small yellow onion, finely chopped
3 cloves garlic, thinly sliced
2 tablespoons ginger, peeled and finely chopped
4 cups low-sodium chicken broth
2 chicken breasts, boneless and skinless, cut in half crosswise
2 (15-ounce) cans cannellini beans, drained and rinsed
4 ounces cream cheese, cubed
1 (4-4.5-ounce) can green chiles
1/4 cup gochujang
1 teaspoon dried oregano
1 teaspoon ground cumin
1 1/4 teaspoons kosher salt
freshly ground black pepper, to taste
1 (10-ounce) bag frozen corn
1/4 cup fresh cilantro leaves, chopped
1 1/2 teaspoons toasted sesame oil
***Optional, for serving:***
tortilla chips, to taste
sour cream, to taste
cheddar, to taste, shredded
kimchi, to taste
scallions, to taste, sliced
sesame seeds, to taste
cilantro leaves, to taste
avocado, to taste, sliced
