"I am lucky enough to live in a town with a restaurant owned by a South African couple. Not only does the Georgia Shrimp Co. serve outstanding seafood, they introduced me to one of my all-time favorite desserts - Malva a.k.a. Malva Pudding. It is a traditional South African dessert. INGREDIENTS

Pudding -
1 cup (250ml) castor sugar
2 eggs, at room temperature
1 tablespoon (15ml) smooth apricot jam
1-1/4 cups (312ml) flour
1 teaspoon bicarbonate of soda (baking soda)
Pinch (less than 1/4 teaspoon) of salt
2 tablespoons (30ml) butter
1 teaspoon (5ml) vinegar
1/2 cup (4 ounces) (125ml) milk
Sauce -
1 cup (250ml) cream
1/2 cup (4 ounces) (125g) butter
1/2 cup (125g) sugar
1/2 cup (125ml) water, orange-juice, sherry or brandy
