3 lbs (3 16-oz packages) frozen chopped spinach, defrosted

3/4 cup freshly grated Parmesan cheese
•
1 tbsp kosher salt
•
1/2 tsp freshly ground black pepper

1/2 cup shredded Swiss Gruyere cheese (I used Sargento)
