For the Filling:
1 tablespoon vegetable oil, plus more for greasing
1 shallot, sliced
½ cup dried wood ear mushrooms, soaked in cold water for 30 minutes, drained, and chopped
1 clove garlic, minced
½ lb ground (minced) pork
1 teaspoon fish sauce, plus more to taste
Salt and freshly ground pepper
Nuoc cham, for serving
