½ cup sucanat or brown sugar

2 Tablespoons melted butter
•
2 eggs

1 teaspoon vanilla extract

½ cup buttermilk
•
1 cup pumpkin puree

Oil for frying (I recommend coconut oil or palm shortening for healthy frying)
