Ingredients
- 2 veal shanks
- salt and pepper
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 large carrot, chopped
- 1 tablespoon grated lemon zest
- 1 cup white wine
- 4 cups veal or beef stock
- 2 tablespoons tomato paste
- GREMOLADA
- 1 clove garlic, minced
- 1 tablespoon lemon zest, grated
- 1 tablespoon fresh parsley, minced
How To Make veal osso buco

Step 1Season the veal with salt and pepper. Add the oil to a large Dutch oven. Brown the veal on all sides. Add the garlic and carrot and sauté 5 minutes.

Step 2Add the wine, lemon zest, stock, and tomato paste Bring to a boil. Reduce to a simmer and simmer covered for 1 hour.

Step 3Remove the lid and braise another 1/2 hour to reduce the sauce. Taste and adjust for salt and pepper.

Step 4Mix the ingredients for the Gremolata together.

Step 5Remove the veal to a plate. Strain the solids out of the sauce into a degreaser. Degrease the sauce.

Step 6Pour over the veal and top with gremolata.
