Ingredients
- 1 whole duck
- 1 tablespoon salt
- 1 teaspoon Chinese 5 spice
- 2 tablespoons ground bean sauce
- 2 tablespoons Hoisin sauce
- 2 tablespoons ketchup
- 1 tablespoon dark soy sauce
- 1 tablespoon brown sugar
- 1/4 cup dark soy sauce
- 1/4 cup maple syrup
How To Make roast duck in hoisin sauce

Step 1Prick the skin of the duck all over. Fill a pot with enough water to cover the duck and bring to a boil. Immerse the duck for about 4 minutes. Remove the duck and dry the duck off.

Step 2Mix the salt, 5 spice, ground bean sauce, hoisin sauce, ketchup, dark soy sauce, and brown sugar. Pour into the cavity of the duck and let sit in the fridge for 8 hours. Score the breast of the duck in a diamond pattern

Step 3Heat the oven to 400 degrees F. Mix the dark soy sauce and maple syrup. Pour 1 cup of water into the roasting pan. Rub the dark soy mixture all over the duck reserving some to brush on the duck while roasting.

Step 4Place in the roaster back side up and roast for 30 minutes. Turn onto its side and roast for 15 minutes. Turn on the other side and roast for 15 minutes. Turn the heat down to 325. Turn the breast side up and brush with the dark soy mixture. Roast another 15 minutes until nice and brown.

Step 5Remove and let rest for about 15 minutes. Then carve and serve.
