Ingredients
- 4 large duck breast trimmed and skin scored.
- 0 - salt and pepper
- 1 cup honey
- 1/2 cup butter
- 1/2 cup thawed orange juice concentrate
- 1 teaspoon lemon juice
How To Make honey orange duck breast

Step 1Preheat oven to 400 degrees F. Season the scored duck breasts with salt and pepper.

Step 2Place the fat side down in a cast iron skillet. Render out the fat and get the fat cap brown and crispy.

Step 3Meanwhile, place the remaining ingredients in a saucepan and bring to a boil, and let reduce for 5 minutes.

Step 4Brush the bottom of the duck breast, then flip them over. Brush the fat side with the honey mixture. Flip again and brush. Cook another 2 minutes.

Step 5Flip again and brush again, and place in the oven. Bake 10 more minutes while continuing to brush and turn every couple of minutes.

Step 6Remove the breast to a carving board to rest.

Step 7Place the cast iron pan back on the top of the stove and add the spinach to the same pan with the fat, and let it wilt. Season with salt and pepper.

Step 8Slice the duck breast and serve over the spinach.
