Ingredients For honey orange duck breast

  • 4 lg
    duck breast trimmed and skin scored.
  • 0
    salt and pepper
  • 1 c
    honey
  • 1/2 c
    butter
  • 1/2 c
    thawed orange juice concentrate
  • 1 tsp
    lemon juice

How To Make honey orange duck breast

    Preheat oven to 400 degrees F. Season the scored duck breasts with salt and pepper.

    Place the fat side down in a cast iron skillet. Render out the fat and get the fat cap brown and crispy.

    Meanwhile, place the remaining ingredients in a saucepan and bring to a boil, and let reduce for 5 minutes.

    Brush the bottom of the duck breast, then flip them over. Brush the fat side with the honey mixture. Flip again and brush. Cook another 2 minutes.

    Flip again and brush again, and place in the oven. Bake 10 more minutes while continuing to brush and turn every couple of minutes.

    Remove the breast to a carving board to rest.

    Place the cast iron pan back on the top of the stove and add the spinach to the same pan with the fat, and let it wilt. Season with salt and pepper.

    Slice the duck breast and serve over the spinach.
