Ingredients

  • 3 lb
    ground venison
  • 1 lb
    ground pork
  • 4 Tbsp
    morton curing salt
  • 2 tsp
    each onion powder, garlic powder, dry minced onion, ground peppercorns, red pepper flakes, and yellow mustard seed
  • 4 large
    jalapenos seeded and pureed in food processor
  • 2 c
    water
  • 2 c
    shredded cheddar cheese

How to Make Homemade Jalapeno & Cheese Venison Sausage

Step-by-Step

  1. Combine all ingredients except cheese together. Mix well place in refrigerator for 24 hours. Remove from fridge add the cheese and mix for 3 minutes. Place back in refrigerator for 24 more hours.
  2. Shape into 6 logs. Wrap in foil and place in preheated 250 degree oven and bake for 4 hours turning once.
  3. Let cool and cut into rounds
