Ingredients

  • 3 pounds ground venison
  • 1 pound ground pork
  • 4 tablespoons morton curing salt
  • 2 teaspoons each onion powder, garlic powder, dry minced onion, ground peppercorns, red pepper flakes, and yellow mustard seed
  • 4 large jalapenos seeded and pureed in food processor
  • 2 cups water
  • 2 cups shredded cheddar cheese

How To Make homemade jalapeno & cheese venison sausage

  • Step 1
    Combine all ingredients except cheese together. Mix well place in refrigerator for 24 hours. Remove from fridge add the cheese and mix for 3 minutes. Place back in refrigerator for 24 more hours.
  • Step 2
    Shape into 6 logs. Wrap in foil and place in preheated 250 degree oven and bake for 4 hours turning once.
  • Step 3
    Let cool and cut into rounds
