Ingredients
- 3 pounds ground venison
- 1 pound ground pork
- 4 tablespoons morton curing salt
- 2 teaspoons each onion powder, garlic powder, dry minced onion, ground peppercorns, red pepper flakes, and yellow mustard seed
- 4 large jalapenos seeded and pureed in food processor
- 2 cups water
- 2 cups shredded cheddar cheese
How To Make homemade jalapeno & cheese venison sausage

Step 1Combine all ingredients except cheese together. Mix well place in refrigerator for 24 hours. Remove from fridge add the cheese and mix for 3 minutes. Place back in refrigerator for 24 more hours.

Step 2Shape into 6 logs. Wrap in foil and place in preheated 250 degree oven and bake for 4 hours turning once.

Step 3Let cool and cut into rounds
