ground venison patties with mushroom onion gravy
It's that time of year again. What to do with all this venison. This is a delicious recipe and great served with mashed potato or hot cooked egg noodles.

Ingredients
- PATTIES
- 1 pound ground venison
- 1/2 pound ground pork
- 1/2 cup parmesan cheese grated
- 2 tablespoons worcestershire sauce
- 4 cloves garlic minced
- 1/4 cup panko bread crumbs
- 1 large egg
- 2 tablespoons oil
- MUSHROOM AND ONION GRAVY
- 2 tablespoons butter
- 8 ounces fresh mushrooms chopped
- 1 large onion sliced in rings
- 1/4 cup bourbon
- 1/4 cup butter
- 1/4 cup flour
- 2 cups beef broth
- 1 tablespoon beef paste or bouillon
- 1 teaspoon kitchen bouquet
- - salt and pepper to taste
How To Make ground venison patties with mushroom onion gravy

Step 1Mix the ingredients for patties together except for the oil. Season with salt and pepper. Add oil to large skillet. Shape meat into 6 patties. Fry in oil until almost done turning a couple of times. Remove meat from skillet.

Step 2Add the 2 tbsp butter to saucepan. Throw in the onions, and mushrooms. Saute until onions are translucent. Add the bourbon and let reduce until almost evaporated.

Step 3Add the butter and flour and make a roux. Add the remaining ingredients and cook until well incorporated. Add the patties back to the skillet and simmer in gravy until done.
