ground venison patties with mushroom onion gravy

It's that time of year again. What to do with all this venison. This is a delicious recipe and great served with mashed potato or hot cooked egg noodles.

Ingredients

  • PATTIES
  • 1 pound ground venison
  • 1/2 pound ground pork
  • 1/2 cup parmesan cheese grated
  • 2 tablespoons worcestershire sauce
  • 4 cloves garlic minced
  • 1/4 cup panko bread crumbs
  • 1 large egg
  • 2 tablespoons oil
  • MUSHROOM AND ONION GRAVY
  • 2 tablespoons butter
  • 8 ounces fresh mushrooms chopped
  • 1 large onion sliced in rings
  • 1/4 cup bourbon
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups beef broth
  • 1 tablespoon beef paste or bouillon
  • 1 teaspoon kitchen bouquet
  • - salt and pepper to taste

How To Make ground venison patties with mushroom onion gravy

  • Step 1
    Mix the ingredients for patties together except for the oil. Season with salt and pepper. Add oil to large skillet. Shape meat into 6 patties. Fry in oil until almost done turning a couple of times. Remove meat from skillet.
  • Step 2
    Add the 2 tbsp butter to saucepan. Throw in the onions, and mushrooms. Saute until onions are translucent. Add the bourbon and let reduce until almost evaporated.
  • Step 3
    Add the butter and flour and make a roux. Add the remaining ingredients and cook until well incorporated. Add the patties back to the skillet and simmer in gravy until done.
