Ingredients

  • 4 - duck breasts, boned
  • RELISH
  • 2 cups chopped raspberries (also can use frozen)
  • 3/4 cup sweet onion, chopped
  • 4 tablespoons raspberry vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh sage or 1/2 tsp. dried sage
  • 1/2 tablespoon crushed red pepper flakes
  • 3 tablespoons creme de cassis
  • MARINADE
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1 clove garlic, minced
  • 1 teaspoon chopped fresh or dried sage

How To Make grilled duck breasts w/ raspberry relish

  • Step 1
    In a glass bowl combine all ingredients for the relish.
  • Step 2
    Separate bowl mix all ingredients for the marinade, add 1/3 cup relish mixture to the marinade.
  • Step 3
    Marinade the duck breasts for 2 - 4 hours, and turning.
  • Step 4
    Grill duck breasts skin side down over a hot heat 5 - 7 minutes. Duck should be served med-rare.
