Grilled Duck Breasts w/ Raspberry Relish

4duck breasts, boned

RELISH
-
2 cchopped raspberries (also can use frozen)

3/4 csweet onion, chopped

4 Tbspraspberry vinegar

2 Tbsplemon juice

1 Tbspfresh sage or 1/2 tsp. dried sage

1/2 Tbspcrushed red pepper flakes

3 Tbspcreme de cassis

MARINADE
-
1/4 colive oil
-
1/2 tspsalt
-
1 clovegarlic, minced
-
1 tspchopped fresh or dried sage
How to Make Grilled Duck Breasts w/ Raspberry Relish
- In a glass bowl combine all ingredients for the relish.
- Separate bowl mix all ingredients for the marinade, add 1/3 cup relish mixture to the marinade.
- Marinade the duck breasts for 2 - 4 hours, and turning.
- Grill duck breasts skin side down over a hot heat 5 - 7 minutes. Duck should be served med-rare.
