grilled butterflied leg of lamb with tarragon
I am just trying out lamb. I thought grilling might be the best first try! There is an 8 hour marinating time that is not included in the prep time!!

Ingredients
- 5-6 pounds leg of lamb, boned and butterflied (i have my butcher do this)
- 1 tablespoon minced garlic
- 1/2 teaspoon pepper
- 1/4 cup tarragon vinegar
- 1/4 cup olive oil
- 3 tablespoons mustard seeds
- 3 tablespoons minced fresh tarragon
How To Make grilled butterflied leg of lamb with tarragon

Step 1Trim fat off of the lamb. Rub garlic and pepper over the entire surface of the lamb. Place the lamb in a 13 x 9 x 2 inch baking dish.

Step 2Combine the vinegar and other ingredients. Stir well. Pour this marinade over the lamb and cover in marinate in the refrigerator for 8 hours, turning occasionally.

Step 3Remove the lamb from the marinade. Discard the marinade.

Step 4Grill over medium coals (300 to 350 degrees) for 20 minutes. Turn and insert a meat thermometer into the thickest portion of the meat. Grill for another 20 minutes or until the thermometer registers 160º.

Step 5Remove from grill. Let rest for 10 minutes. Slice against the grain into thin slices.
