Ingredients

  • 4 duck breasts
  • 1 medium red onion diced
  • 1 pound ripe plums quartered and pitted
  • 2 tablespoons red currant jelly

How To Make duck with plum sauce

  • Step 1
    Prick the duck all over with a fork. Season with salt and pepper Place them in a large skillet skin side down and let render the fat from the skin and cook until skin is crispy turn and brown on the other side and remove to a chopping board to rest.
  • Step 2
    Pour all but 2 tbsp of fat from the skillet. stir fry the onion for 5 minutes. Add the plums and cook another 5 minutes breaking the plums up. Stir in the red current jelly.
  • Step 3
    Season with salt and pepper and serve with duck.
