How To Make duck noodle dish with chili plum sauce
-
Step 1First, make the sauce. Quarter the plums and place them in a baking pan. Throw in the star anise and cinnamon stick. Mix the wine, soy, sweet chili sauce, rice vinegar, sugar, zest, and juice of the orange together, and pour over the plums. Roast for 15 minutes at 375 degrees F.
-
Step 2Cook the noodles and set aside.
-
Step 3Score the duck breast and place in a pan skin side down over low heat and let the fat render until the skin is browned and crispy. Season the non-skin side with salt.
-
Step 4Turn the breast skin side up and transfer the pan to the oven at 375 degrees and roast for about 5 minutes, depending on how you like it done.
-
Step 5Let rest for 10 minutes, then slice.
-
Step 6Divide the noodles between two bowls. Top with the plum sauce, then the sliced duck breast. Garnish with cilantro.
