Ingredients
- 4 duck breasts boneless skinless
- salt and pepper
- 1 teaspoon oil
- BERRY SAUCE
- juice of one orange
- 1 bay leaf
- 3 tablespoons red currant jelly
- 5 ounces fresh or frozen mixed berries
- 1 teaspoon brown sugar
- 1 tablespoon balsamic vinegar
- 1 tablespoon instant tapioca
How To Make duck breast with berry sauce

Step 1Season the duck breasts with salt and pepper. Add oil to a pan and place the duck into the pan and cook about 4 minutes then turn the duck and cook 3 more minutes. Sit aside to rest.

Step 2For the sauce. Put the orange juice, bay leaf, redcurrent jelly and frozen or fresh fruit & brown sugar in a pan.

Step 3Bring to a boil. Reduce heat and simmer about 5 minutes. Remove the bay leaf and stir in the vinegar and instant tapioca and cook until thicken.

Step 4Cut the duck and serve over the mixed berry sauce.
