Ingredients

  • 4 duck breasts boneless skinless
  • salt and pepper
  • 1 teaspoon oil
  • BERRY SAUCE
  • juice of one orange
  • 1 bay leaf
  • 3 tablespoons red currant jelly
  • 5 ounces fresh or frozen mixed berries
  • 1 teaspoon brown sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon instant tapioca

How To Make duck breast with berry sauce

  • Step 1
    Season the duck breasts with salt and pepper. Add oil to a pan and place the duck into the pan and cook about 4 minutes then turn the duck and cook 3 more minutes. Sit aside to rest.
  • Step 2
    For the sauce. Put the orange juice, bay leaf, redcurrent jelly and frozen or fresh fruit & brown sugar in a pan.
  • Step 3
    Bring to a boil. Reduce heat and simmer about 5 minutes. Remove the bay leaf and stir in the vinegar and instant tapioca and cook until thicken.
  • Step 4
    Cut the duck and serve over the mixed berry sauce.
