Ingredients
- 1 duck breast skin scored
- 2 tablespoons raspberry vinegar
- 2 tablespoons brandy
- 1 tablespoon honey
- SAUCE
- 8 ounces raspberries, fresh or frozen, if frozen thawed
- 1 cup rose wine
- 2 tablespoons sugar
- 4 teaspoons water
- 2 teaspoons corn starch
- 1 kiwi, peeled and sliced
How To Make duck breast with berry sauce and kiwi

Step 1Season the duck breast with salt and pepper. Mix the raspberry vinegar, brandy, and honey. Place the duck in the marinade and marinate for 1 hour.

Step 2Meanwhile, make the sauce. Keep a few raspberries for garnish. Place the remaining raspberries in a saucepan. Add the wine and sugar. Bring to a boil. Reduce to a simmer and simmer for about 10 minutes. Strain the sauce through a fine mesh strainer pushing the solids to get the most sauce out. Discard the solids. Place back in a saucepan and set aside.

Step 3Remove the duck from the marinade and add the marinade to the sauce. Place the duck in a hot pan skin side down and cook over medium heat to render the fat and get the skin crispy for about 10 minutes. Turn the duck and cook another 5 minutes. Remove to a carving board to rest.

Step 4Meanwhile, bring the sauce with the added marinade back to a boil. Mix the corn starch and water. Whisk into the sauce until thickened.

Step 5Cut the duck and arrange a piece of kiwi in between each slice. Pour the sauce around the duck and garnish with the reserved raspberries.
