Ingredients
- 2 duck breast
- salt and pepper
- 2 tablespoons olive oil
- 1 medium shallot, chopped
- 4 cloves garlic, minced
- 1/2 cup dry vermouth
- 1/2 cup orange juice
- 1/2 cup chicken stock
- 1 tablespoon sherrry vinegar
How To Make duck breast in savory orange sauce

Step 1Score the skin on the duck breast. Season with salt and pepper. Add the olive oil to a cast iron skillet. Get the skillet smoking hot.

Step 2Place the duck breast in the skillet skin side down. Do not move the duck let the fat render from the skin and get really browned for about 7 minutes.

Step 3Mix the vermouth, orange juice, chicken stock, and sherry vinegar.

Step 4Remove the duck from the skillet and set aside. Add the shallot and garlic to the skillet and cook for 30 seconds. Pour in the orange juice mixture and bring to a boil. Reduce heat to a medium and let reduce to about half. Add the duck breast back skin side up and cook for about 4 minutes. Remove the duck to a cutting board and keep reducing the sauce to about 1/2 cup. Strain the sauce and discard the solids.

Step 5Once the duck has rested for about 10 minutes slice and serve with the sauce.
