Ingredients
- 1 whole duck
- 2 tablespoons salt
- FOR CAVITY
- 5 cloves garlic, peeled
- 2 small shallots, halved
- 1 orange, quartered
- 1/4 cup prunes
- GLAZE
- 1 cup honey
- 1 tablespoon molasses
- 3 tablespoons orange juice
- 2 tablespoons Hoisin sauce
How To Make crispy roasted duck

Step 1Defrost the duck and let it sit in the fridge uncovered overnight. This will help dry and crisp the skin.

Step 2Cut excess fat off the duck then score the breast in a diamond pattern trying not to touch the skin. Poke the bird all over with the tip of a sharp knife trying not to hit the skin.

Step 3Preheat oven to 350 degrees. Season the duck all over with the salt including the cavity then stuff the cavity with garlic, shallots, oranges, and prunes. Sew the cavity closed with toothpicks then tie the legs together with butcher twine.

Step 4Place the bird in a roasting pan breast side up and roast for one hour. After an hour remove the duck. Prick the skin again. Turn the duck breast side down and roast for another hour.

Step 5Meanwhile, make the glaze by combining the ingredients in a small saucepan and cook for about 10 minutes. After two hours remove the duck from the oven prick and turn the oven up to 400 degrees.

Step 6Turn the duck breast up and roast for 15 minutes. Brush with the glaze and roast for 15 more minutes. Let the duck rest for 30 minutes tented with foil. Remove the cavity items and discard them. Carve the duck and enjoy.
