How To Make cornish hens with hoisin lime sauce
-
Step 1To make the marinade, combine all ingredients in a medium bowl. Season the game hens inside and out with the marinade and let marinate in the fridge overnight.
-
Step 2Preheat the oven 300 degrees F. Remove the hens from the marinade and place in a baking pan with a rack. Reserve the marinade. Roast for 30 minutes. Meanwhile, make the sauce.
-
Step 3To make the hoisin lime sauce, add a little oil to a saute pan. Add the shallots and garlic and cook about 2 minutes. Add the remaining ingredients except the oil and cook 4 minutes. Transfer the mixture to a food processor and process while drizzling in the oil. Place the sauce back in a pan big enough for the 2 hens to fit. Add the reserved marinade to the sauce.
-
Step 4Remove the hens from the oven and nestle them into the sauce. Bring to a simmer and cook, basting with the sauce for 15 more minutes. Serve garnished with scallions. Serve with rice or noodles.
