How to Make Butter Basted Crispy Skin Duck Breast
- Get a cast iron pan hot and add the oil. Dry the duck breast, score the skin & season with salt and pepper. Sear the duck breast skin side down until the fat has rendered out and the skin is crispy
- Turn the breast over. Add the butter to the pan with the rosemary sprigs.
- Turn the breast over again and baste with the butter for about 3 minutes. Turn the breast skin side up and baste another 3 minutes with the butter.
- Remove the breast from the pan and let it rest 10 minutes. Slice and serve
