How To Make butter basted crispy skin duck breast
1Get a cast iron pan hot and add the oil. Dry the duck breast, score the skin & season with salt and pepper. Sear the duck breast skin side down until the fat has rendered out and the skin is crispy
2Turn the breast over. Add the butter to the pan with the rosemary sprigs.
3Turn the breast over again and baste with the butter for about 3 minutes. Turn the breast skin side up and baste another 3 minutes with the butter.
4Remove the breast from the pan and let it rest 10 minutes. Slice and serve
