2In a large skillet brown beef. Once it's cooked through add all veggies the veggies, ½ the enchilada sauce, the tomato sauce, garlic salt, chili powder and oregano. Warm through.
3In a casserole dish place a tortilla on one side, spread a little cheese and spoon meat veggie mix and roll towards the side of the and repeat with the rest of the 5 tortillas. Once they are all rolled pour the enchilada sauce over the rolled tortillas and top with cheese. Bake for 15-20 minuted or until cheese is melted.
4Serve topped with olives, sour cream, tomatoes or whatever you'd like.
