white girl enchiladas

My friend named these for me. Their not your average enchiladas but they are so yummy!!!

Ingredients

  • 6 medium whole wheat tortillas
  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 - green bell pepper, chopped
  • 1 - red bell pepper, chopped
  • 1 1/2 cups white mushrooms, chopped
  • 4 - roma tomatoes, chopped
  • 1 small can red enchilada sauce
  • 1 small can plain tomato sauce
  • 1 tablespoon garlic salt
  • 1 tablespoon chili powder
  • 1 tablespoon oregano, dried
  • 3 cups mexican blend shredded cheese

How To Make white girl enchiladas

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    In a large skillet brown beef. Once it's cooked through add all veggies the veggies, ½ the enchilada sauce, the tomato sauce, garlic salt, chili powder and oregano. Warm through.
  • Step 3
    In a casserole dish place a tortilla on one side, spread a little cheese and spoon meat veggie mix and roll towards the side of the and repeat with the rest of the 5 tortillas. Once they are all rolled pour the enchilada sauce over the rolled tortillas and top with cheese. Bake for 15-20 minuted or until cheese is melted.
  • Step 4
    Serve topped with olives, sour cream, tomatoes or whatever you'd like.
