My friend named these for me. Their not your average enchiladas but they are so yummy!!!

Ingredients
- 6 medium whole wheat tortillas
- 1 pound ground beef
- 1 large onion, chopped
- 1 - green bell pepper, chopped
- 1 - red bell pepper, chopped
- 1 1/2 cups white mushrooms, chopped
- 4 - roma tomatoes, chopped
- 1 small can red enchilada sauce
- 1 small can plain tomato sauce
- 1 tablespoon garlic salt
- 1 tablespoon chili powder
- 1 tablespoon oregano, dried
- 3 cups mexican blend shredded cheese
How To Make white girl enchiladas

Step 1Preheat oven to 350 F.

Step 2In a large skillet brown beef. Once it's cooked through add all veggies the veggies, ½ the enchilada sauce, the tomato sauce, garlic salt, chili powder and oregano. Warm through.

Step 3In a casserole dish place a tortilla on one side, spread a little cheese and spoon meat veggie mix and roll towards the side of the and repeat with the rest of the 5 tortillas. Once they are all rolled pour the enchilada sauce over the rolled tortillas and top with cheese. Bake for 15-20 minuted or until cheese is melted.

Step 4Serve topped with olives, sour cream, tomatoes or whatever you'd like.
