unstuffed peppers with ground turkey

Craving stuffed peppers and had this stuff on hand. I don't want to forget what I did because we loved it.

Ingredients For unstuffed peppers with ground turkey

  • 1/2 lb
    lean ground turkey
  • 1 lg
    green pepper, chopped
  • 1 stalk
    celery, chopped
  • 1/4 c
    red onion, chopped (any onion ok)
  • 1 clove
    garlic, minced
  • 8 oz
    tomato sauce
  • 1/2 c
    water (or more, if necessary)
  • 1 tsp
    chicken flavor Better Than Bouillon
  • 1/4 tsp
    salt and pepper, or to taste
  • 1/4 tsp
    Cajun seasoning, or to taste
  • 1/4 tsp
    garlic and herb seasoning, to taste
  • 12 sm
    green pimento-stuffed olives, sliced or cut in half
  • 1 pkg
    brown rice-quinoa package (not sure of ounces)
  • 1/2 c
    quinoa, cooked leftover (if available)
  • 1/4 tsp
    shredded cheese (Mexican blend or choice)

How To Make unstuffed peppers with ground turkey

  • 1
    In a deep skillet, heat a couple of spritzes of olive oil. Add turkey and break up. Add onion, celery, and peppers, and sauté together with the turkey until there is no more pink visible. Veggies will have softened by this time. Add garlic and cook a little longer.

    Add tomato sauce, water, and bouillon. Stir together and add seasonings. Adjust seasonings to taste.

    Add sliced olives and quinoa mix. Let simmer together for a couple of minutes until hot.

    Sprinkle each serving with cheese.
