Turkey Steak was another historic recipe found among the treasures of the old farmhouse. It is simple and really good. The way it is worded tells me that it's a pretty old recipe. Instead of a whole Turkey I tested it with a whole turkey breast. Since that is what the recipe focused on.

Ingredients
- 1 - turkey breast (5-8 lbs) or you can parboil a 30 lbs turkey
- 1 quart milk
- 8 - eggs
- - salt & pepper, to taste
- 2 cups flour enough for dredging
- 2 cups bread crumbs
- - deep fat
How To Make turkey steak

Step 1Parboil a turkey of 26-30 lbs. ( I made it simple by using just the turkey breast) until fairly well done. Lift out breast and cut steaks as you would from a beef tenderloin.

Step 2Dip steaks in a batter made of milk, eggs, salt, and pepper. Dredge in flour; shake off excess. Then dunk back in batter and dredge in breadcrumbs.

Step 3Fry in fat (350^) until golden brown. (Cook in a deep fat fryer)
