This is something to do with the leftovers from your Thanksgiving dinner. My husband looks forward to them before Thanksgiving gets here. I almost feel silly for posting this because it's so easy... LOL!

Reinvent your holiday leftovers with these adorable turkey pot pies. They're the perfect size for one person. Made with whatever extras you have on hand, a nice flaky crust holds the ingredients inside. You can use your favorite pie crust recipe or use a store-bought one (which makes these even easier to prepare). Those who don't like leftovers will enjoy these turkey pot pies. If you don't have enough leftover gravy, use a jar of turkey gravy to prevent the pies from becoming dry.     chopped up leftover turkey

    leftover green bean casserole or any frozen vegetables

    leftover gravy

    leftover stuffing (optional)

    pie crust dough (you can use my recipe, works out wonderful!)

How to Make Turkey Pot Pies


  1. Make up a pie crust recipe for one pie. Cut round circles 5 inches round. You can use a lid from a container.
  2. In your cupcake pan, place circles inside and press gently being careful not to break the dough. (No need to spray the bottoms or sides.)

    If you want to make larger pot pies you can make them in ramekins or the larger 6 cupcake pans. Just roll your dough out to a larger circle.
  3. Place some chopped turkey in the bottom 1/4 the way up.
  4. Add a little bit of green beans, any leftover vegetables or stuffing.
  5. Top with gravy.
  6. Put another pie dough circle on top and press on the sides.
  7. Bake at 350 degrees until your crust is golden brown.
  8. Let them rest before removing. They will slide out easily! Place on a dish by themselves or in a ramekin when serving.
  9. If you have a lot of leftovers, spend a little extra time making these and freeze them up. ENJOY!!!!
