This is great for leftover Thanksgiving turkey! We actually eat a lot of turkey year round. Sometimes I buy one of the small Jennie O. half turkey breasts from the store and cut that up and saute it for this recipe.

Ingredients

  • 2
    2 deep dish pie crusts of your choice. i use elaine bovender's Fool-Proof Pie Crust and double the recipe to make 2 double layer crusts
  • 1/2 stick
    butter
  • 1/4 c
    all purpose flour
  • 1 can(s)
    (14.5 oz.) chicken broth or stock
  • 1 c
    half & half
  • 2
    carrots, peeled and sliced
  • 3 stalk(s)
    celery, sliced
  • 2 medium
    potatoes, peeled and finely diced
  • 2 tsp
    chicken soup base
  • 1/2 tsp
    ground thyme
  • 1 tsp
    dried parsley leaves
  • ·
    salt & pepper to taste
  • 2 Tbsp
    butter, melted
  • 2-3 c
    cooked, chopped turkey meat

How to Make Turkey Pot Pie

Step-by-Step

  1. Preheat oven to 400 degrees.
  2. Separate 2/3 pie crust for bottom layer. I use two deep dish pies or 1 (9x13) baking dish. Roll crust out to cover the bottom of your pans. Chill top crust in the refrigerator while you partially bake the bottom crust and cook the filling.
  3. Bake bottom layer at 400 degrees for 10- 15 minutes until halfway baked.
  4. Meanwhile, melt butter in pan and potatoes, celery, carrots and onions. Saute for 10 minutes until veggies start to cook and onions are translucent.
  5. Sprinkle flour over vegetables and mix until moistened and incorporated.
  6. Pour chicken broth and half & half over veggies and stir. thyme, parsley, and chicken soup base. Simmer about 20 minutes, Sauce will become thickened and bubbly. Add cooked turkey to sauce mixture.
  7. Pour filling into dish/es with half cooked pie crust. Roll out the top layer of the pie crust and cover top of pie/s. Bake at 400 degrees for 1 hour or until top crust is golden brown. Brush with pie/s with 2 Tbsp. melted butter before serving.
